Anybody have a good pina colada recipe? Warm weather's here and I want to make a batch from scratch tonight.

I cheat, I buy mix and add rum, but an important thing I picked up over the years is a float of dark rum (preferably Myers) on top.

A bastardized one (which I have done) is coconut water and rum with pineapple juice added.

You have challenged me though . . . I like to at least know how to make things from scratch (margaritas, etc.) so now I need to search a fresh pina colada recipe for Flemingo Key this summer.

I look forward to testing the responses you get.

You can't buy canned mixes where I am, but I managed to put one together. Unfortunately, it wasn't as "scratch" as I would have liked: powdered coconut cream and pineapple juice. Still, the Jimmy Buffet made it seem like not such a big deal.

Next time I'm going to make the effort to seek out actual coconuts and pineapples. But I'm not sure how you make coconut cream out of a coconut.

Coco Lopez Cream of Coconut
Dole Pineapple Juice
Yoplait Vanilla Yogurt
Blend with Ice and serve in an exotic tropical glass!
